Easy No-Bake Strawberry Delight

A refreshing, creamy, and fruity dessert that requires no baking! Perfect for warm days or when you want a quick, delicious treat. Layers of graham cracker crust, fresh strawberries, fluffy no-bake cheesecake, and whipped cream make this a crowd-pleaser.

For the Crust:

  • 2 cups (240g) graham cracker crumbs
  • ½ cup (113g) unsalted butter, melted

For the Filling:

  • 2 lbs (32oz) fresh strawberries, washed & dried
  • 16 oz (452g) full-fat cream cheese, softened
  • ¼ cup (48g) granulated sugar
  • 1 tbsp fresh lemon juice
  • 1 tsp (5ml) vanilla extract
  • 1 cup (236ml) heavy whipping cream
  • ½ cup (65g) powdered sugar
  • 2 tbsp strawberry Jello mix

For the Topping:

  • 1 cup (236ml) heavy whipping cream
  • ½ cup (65g) powdered sugar

Instructions

1. Make the Crust:

  • Crush graham crackers into fine crumbs and mix with melted butter.
  • Press firmly into a 9×9-inch pan and refrigerate.

2. Prepare Strawberries:

  • Dice 1 cup of strawberries (small pieces).
  • Slice the rest lengthwise and pat dry with a paper towel.

3. Make Whipped Cream:

  • Chill a mixing bowl for 5-10 minutes.
  • Beat 1 cup heavy cream until soft peaks form.
  • Add ½ cup powdered sugar and whip until stiff. Set aside.

4. Make Cheesecake Filling:

  • Beat cream cheese, sugar, lemon juice, and vanilla until smooth.
  • Fold in the whipped cream.
  • Divide mixture in half—mix one half with strawberry Jello and diced strawberries.

5. Assemble Layers:

  1. Layer sliced strawberries over the crust.
  2. Spread plain cheesecake filling over strawberries.
  3. Top with strawberry cheesecake filling.
  4. Whip the remaining cream & sugar for topping. Pipe or spread over dessert.

6. Chill & Serve:

  • Refrigerate for 4-6 hours before slicing.
  • Garnish with extra strawberries or freeze-dried strawberry dust.
