Instructions

  1. Sauté Vegetables: Heat the olive oil in a large soup pot over medium-high heat. Add the onion and celery, and sauté for 5-7 minutes until softened. Stir in the garlic and cook for 30 seconds.
  2. Brown the Beef: Add the ground beef to the pot and cook, breaking it up with a spoon, until browned (about 8 minutes). Drain any excess fat if needed.
  3. Add Flour and Tomato Paste: Sprinkle the flour over the beef and stir to coat. Cook for 1-2 minutes, stirring often. Stir in the tomato paste until well combined.
  4. Simmer the Stew: Add the beef broth, Worcestershire sauce, Italian seasoning, potatoes, and carrots. Increase the heat to high and bring to a boil. Reduce the heat to a rapid simmer, cover with the lid slightly open, and cook for 30 minutes or until the vegetables are tender. Stir occasionally and add more broth if the stew gets too thick.
  5. Add Peas and Season: Stir in the frozen peas and cook for 2-3 minutes until heated through. Season with salt and pepper to taste.
