2 ripe avocados (not too soft)
1 tbsp olive oil
Juice of 1 lime
Salt & pepper to taste
Optional toppings: diced tomatoes, feta cheese, cilantro, or grilled corn
Prep Avocados: Cut avocados in half and remove the pit. Brush each half with olive oil and squeeze lime juice over the top. Sprinkle with salt and pepper.
Preheat Grill: Set to medium-high heat.
Grill Avocados: Place cut side down on the grill for 3–4 minutes until grill marks form and flesh softens.
Add Toppings & Serve: Fill the centers with your favorite toppings and serve warm.
Use avocados that are just barely ripe—they’ll hold their shape better on the grill.
