  • 2 tbsp olive oil
  • 1 tbsp butter
  • 4 cloves garlic, minced
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 tbsp chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Prep & Roast Potatoes
    • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
    • Toss halved potatoes with olive oil, salt, and pepper. Spread in a single layer on the baking sheet.
    • Roast for 25–30 minutes, flipping halfway, until golden and tender.
  2. Make the Creamy Garlic Sauce
    • In a skillet over medium heat, melt butter. Add garlic and sauté for 1–2 minutes until fragrant.
    • Pour in heavy cream and simmer for 3–4 minutes until slightly thickened.
    • Remove from heat and stir in Parmesan until melted and smooth.
  3. Assemble & Serve
    • Transfer roasted potatoes to a serving dish. Drizzle with sauce and garnish with parsley.

  • Lighter Option: Swap heavy cream with half-and-half or whole milk (sauce will be thinner).
