Ingredients

Scale
  • 8 oz farfalle pasta (or your favorite type)
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tsp Cajun seasoning (adjust to taste)
  • 4 oz cream cheese, softened and cut into small pieces
  • 1 cup milk
  • ¾ cup freshly grated Parmesan cheese
  • ½ tsp freshly ground black pepper
  • ½ tsp salt (adjust to taste)
  • Fresh vegetables (optional: bell peppers, spinach, broccoli, etc.)

Instructions

  1. Cook the Pasta:
    • Boil the pasta according to package instructions until al dente. Drain, rinse with cold water, and set aside.
  2. Cook the Chicken:
    • In a large skillet or pot, melt the butter over medium heat. Add the garlic and cook for 30 seconds until fragrant.
    • Add the chicken pieces (and any desired vegetables) and season with Cajun seasoning. Cook for 3-4 minutes until the chicken is nearly cooked through.
  3. Make the Sauce:
    • Add the milk and cream cheese to the skillet. Stir well until the cream cheese melts and the sauce becomes smooth (2-3 minutes).
    • Stir in the cooked pasta, Parmesan cheese, salt, and pepper. Mix until everything is well-coated and heated through.
  4. Serve:
    • Serve immediately, garnished with extra Parmesan cheese or fresh herbs if desired.

Notes

  1. Cajun Seasoning: Adjust the amount of Cajun seasoning to suit your spice preference.
  2. Vegetables: Add veggies like bell peppers, spinach, or broccoli for extra nutrition and flavor.
  3. Healthy Swaps: Use whole-grain pasta, low-fat cream cheese, and skim milk to lighten the dish.
  4. Make Ahead: Prepare the chicken and sauce in advance, then reheat and toss with freshly cooked pasta when ready to serve.
