Ingredients

Scale

For the Brownies:

  • 1 cup unsalted butter
  • ½ cup semi-sweet chocolate chips
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon pure vanilla extract
  • ¾ cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • ½ teaspoon kosher salt
  • ½ teaspoon baking powder

For the Peanut Butter Filling:

  • ¾ cup unsalted butter, melted
  • 1 ½ cups creamy peanut butter
  • 1 teaspoon pure vanilla extract
  • 3 cups powdered sugar

For the Ganache:

  • 1 ½ cups dark chocolate chips
  • 6 tablespoons heavy whipping cream

Instructions

  1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a 13×9-inch baking dish with parchment paper and set aside.
  2. Make the Brownie Batter:
    • In a medium saucepan, melt the butter over medium heat. Once melted, remove from heat and add the chocolate chips and granulated sugar. Stir until the chocolate is completely melted.
    • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
    • Add the cocoa powder, flour, salt, and baking powder. Stir until just combined and no dry ingredients are visible.
  3. Bake the Brownies:
Pour the batter into the prepared baking dish and spread evenly. Bake for 23-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  4. Prepare the Peanut Butter Filling:
While the brownies are baking, make the filling. In a mixing bowl, combine the melted butter, peanut butter, vanilla extract, and powdered sugar. Beat until smooth and well combined.
  5. Assemble the Layers:
    • Once the brownies are done baking, remove them from the oven. Gently drop spoonfuls of the peanut butter filling onto the warm brownies. Use your fingertips to spread it evenly over the surface.
    • For the ganache, combine the dark chocolate chips and heavy cream in a microwave-safe bowl. Microwave for 1 minute, then stir until smooth. Pour the ganache over the peanut butter layer and spread evenly.
  6. Chill and Serve:
Refrigerate the brownies for at least 2 hours to set the layers. Once chilled, cut into bars and serve. Enjoy!

Notes

  1. Use Quality Ingredients: High-quality chocolate and creamy peanut butter make a big difference in flavor.
  2. Don’t Overbake the Brownies: They should be slightly fudgy, so check them at the 23-minute mark.
  3. Chill Thoroughly: Letting the brownies chill ensures clean cuts and perfect layers.
  4. Customize: Add a sprinkle of sea salt on top of the ganache for a sweet-and-salty twist.
