  • ½ cup chocolate chips
  • ¾ cup Easter-themed candies (M&M’s, mini Cadbury eggs, etc.), divided

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Spray a 9-inch pie plate with non-stick cooking spray and set aside.
  2. Melt the Butter: In a large microwave-safe bowl, melt the butter. Add the brown sugar and granulated sugar, and mix until combined. Stir in the vanilla extract and egg.
  3. Combine Dry Ingredients: In a separate medium bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the butter mixture until just combined.
  4. Add Mix-Ins: Fold in the chocolate chips and ½ cup of the Easter candies. Reserve the remaining candies for topping.
  5. Spread the Dough: Scrape the dough into the prepared pie plate and use an offset spatula to smooth the top evenly.
  6. Bake: Bake for 25 minutes or until the top is golden brown.
  7. Decorate: As soon as the cookie cake comes out of the oven, gently press the remaining candies onto the surface while it’s still warm.
  8. Cool and Serve: Allow the cookie cake to cool completely in the pan before slicing and serving.
