1 cup all-purpose flour
1/4 cup granulated sugar
1 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1/4 cup milk
2 large eggs
1 tsp vanilla extract
1 1/2 cups diced fresh peaches
Oil for frying (vegetable or canola)
For the glaze:
1 cup powdered sugar
2–3 tbsp milk
1/2 tsp vanilla extract
Heat oil in a deep skillet to 350°F (175°C).
In a bowl, whisk flour, sugar, baking powder, salt, and cinnamon.
In another bowl, mix milk, eggs, and vanilla. Add to dry ingredients and stir until just combined.
Fold in diced peaches.
Drop heaping tablespoons of batter into hot oil, frying 2–3 minutes per side until golden brown.
Remove with slotted spoon and drain on paper towels.
Mix glaze ingredients in a bowl until smooth.
Drizzle glaze over warm fritters or dip them for extra sweetness.
Dice peaches small so they cook evenly.
Keep fritters warm in the oven (200°F) while frying batches.
