1 lb (450g) salmon fillet, cut into bite-sized pieces
1/2 cup all-purpose flour
1/2 cup cornstarch
2 eggs, beaten
1 cup breadcrumbs (Panko for extra crunch)
1/2 tsp salt
1/2 tsp pepper
1/2 tsp paprika
1/2 cup honey
1/4 cup soy sauce
4 cloves garlic, minced
2 tbsp olive oil or butter
1 tbsp lemon juice
Fresh parsley for garnish (optional)
Prepare the salmon: Pat dry the salmon pieces with a paper towel.
Set up a breading station: In one bowl, mix flour, salt, pepper, and paprika. In a second bowl, beat the eggs. In a third bowl, place the breadcrumbs.
Coat the salmon: Dip each piece into the flour, then egg, then breadcrumbs.
Cook the salmon: Heat a skillet with olive oil over medium heat. Fry salmon bites until golden and crispy (about 2–3 minutes each side). Remove and set aside.
Make the honey garlic sauce: In the same skillet, add a little butter or oil. Sauté garlic until fragrant. Stir in honey, soy sauce, and lemon juice. Simmer for 2 minutes.
Toss the salmon: Add the crispy salmon bites back into the pan. Gently toss to coat them in the sauce.
Serve and enjoy: Sprinkle with parsley if you like, and serve hot!
For extra crispiness, double-coat the salmon pieces by dipping them again in egg and breadcrumbs!
