Ingredients

Scale

Chicken:

  • 2 large boneless, skinless chicken breasts
  • 2 teaspoons Italian seasoning
  • Salt and pepper, to taste
  • 2 tablespoons butter, melted
  • 12 tablespoons olive oil

Sauce:

  • 10.5 oz. cream of chicken soup
  • 1 ½ cups milk
  • 1 cup sour cream, at room temperature
  • ½ teaspoon onion powder
  • 1 oz. packet Ranch seasoning mix (about 3 tablespoons)

Instructions

  1. Prepare the Chicken:
    • Slice each chicken breast horizontally into 2-3 thinner pieces. Pound with a meat tenderizer to an even thickness (about ½ inch).
    • Season both sides of the chicken with Italian seasoning, salt, and pepper. Brush one side of each piece with melted butter.
  2. Sear the Chicken:
    • Heat olive oil in a large skillet over medium-high heat. Sear the chicken in batches for 4-5 minutes per side, until golden brown. Remove and set aside.
  3. Make the Sauce:
    • In the same skillet, combine cream of chicken soup, milk, sour cream, onion powder, and Ranch seasoning. Stir well and let it simmer for 5 minutes, allowing the sauce to thicken slightly.
  4. Combine and Simmer:
    • Return the chicken to the skillet, spooning the sauce over the top. Partially cover the skillet and let it simmer for 10 minutes, allowing the chicken to absorb the flavors.
  5. Serve:
    • Serve hot with baked potatoes, rice, or steamed vegetables. Spoon extra sauce over the chicken and sides for added flavor.

Notes

  • Ranch Seasoning: Use Ranch seasoning mix, not Ranch dip mix, for the best flavor.
  • Add-Ins: For extra flavor, top with crispy bacon or shredded cheese. You can also stir in frozen vegetables during the sauce step.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
