Ingredients

Scale

For the Chicken:

  • 4 boneless, skinless chicken breasts (58 oz. each)
  • Salt and pepper, to taste
  • 3 tablespoons butter, divided
  • 1 tablespoon olive oil
  • 1 tablespoon flour
  • Fresh parsley, to garnish (optional)

For the Sauce:

  • 1 cup low-sodium chicken broth
  • 1/2 cup milk
  • 1/4 cup sour cream (full-fat recommended)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1 (1 oz.) packet ranch seasoning mix

Instructions

  1. Prepare the Chicken:
    • Pound the chicken breasts to an even 1-inch thickness using a meat mallet or rolling pin. Season both sides generously with salt and pepper.
  2. Sear the Chicken:
    • In a large skillet over medium-high heat, melt 1 tablespoon of butter and add the olive oil. Sear the chicken breasts for 4-5 minutes per side, or until golden brown. Remove the chicken from the skillet and set aside on a plate.
  3. Make the Sauce:
    • Reduce the heat to low and add the remaining 2 tablespoons of butter to the skillet. Stir in the flour and cook for about 1 minute to create a roux.
    • Slowly pour in the chicken broth, scraping up any browned bits stuck to the pan.
    • Add the milk, sour cream, onion powder, garlic powder, Italian seasoning, and ranch seasoning mix. Stir until the sauce is smooth and the ingredients are fully combined.
  4. Simmer the Chicken:
    • Return the chicken and any plate juices to the skillet, spooning the sauce over the chicken. Simmer for 5-7 minutes, or until the chicken is heated through and the sauce has thickened slightly.
  5. Serve:
    • Dish the chicken and sauce onto plates. Garnish with fresh parsley if desired. Serve hot and enjoy!

Notes

  • Chicken Size: If your chicken breasts are large, cut them in half lengthwise to create thinner cutlets. This ensures even cooking.
  • Sour Cream: Use full-fat sour cream to prevent curdling in the sauce.
  • Extra Flavor: Add crispy bacon bits to the sauce or sprinkle them on top for a smoky twist.
  • Sauce Consistency: If the sauce is too thick, add a splash of chicken broth or milk to reach your desired consistency.
