  • ½ cup sun-dried tomatoes, chopped (in oil for added flavor)
  • 1 cup baby spinach
  • 1 teaspoon Italian seasoning
  • ½ cup grated Parmesan cheese
  • Fresh basil, for garnish (optional)

Instructions

1. Season the Chicken:
Pat the chicken breasts dry with a paper towel and season both sides generously with salt and pepper.

2. Sauté the Chicken:
Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for 5-7 minutes per side, or until golden brown and cooked through (internal temperature of 165°F). Remove the chicken from the skillet and set aside on a plate.

3. Make the Sauce:
In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and chicken broth, stirring to combine.

5. Add Spinach:

6. Combine Chicken and Sauce:
Return the cooked chicken breasts to the skillet, nestling them into the sauce. Spoon some of the sauce over the chicken and let it cook together for 2-3 minutes to allow the flavors to meld.
