Creamy Cucumber Salad: The Ultimate Summer Side Dish

Creamy Cucumber Salad

This cool and creamy cucumber salad is a refreshing and light side dish, perfect for hot summer days or as a complement to grilled meals. It’s quick to prepare and requires minimal ingredients, making it a go-to recipe for busy days. The tangy sour cream dressing paired with crisp cucumbers and fresh dill creates a delightful balance of flavors.

Ingredients

Scale
  • 3 pounds cucumbers, peeled
  • 1 small onion (red or yellow), finely chopped
  • 18 oz light sour cream
  • ¾ cup white distilled vinegar
  • 1 tablespoon sugar
  • 2 teaspoons fresh dill, chopped
  • Salt and pepper (to taste, optional)

Instructions

  1. Prepare the cucumbers: Slice the peeled cucumbers thinly using a knife or a mandoline for even slices.
  2. Chop the onion: Finely chop the onion to ensure it blends well with the salad.
  3. Combine cucumbers and onion: Add the sliced cucumbers and chopped onion to a large mixing bowl.
  4. Make the dressing: In a separate bowl, whisk together the light sour cream, white distilled vinegar, sugar, and chopped dill. If desired, add a pinch of salt and pepper to taste.
  5. Mix the salad: Pour the sour cream dressing over the cucumbers and onion. Gently toss until everything is evenly coated.
  6. Chill: Cover the bowl (or transfer the salad to an airtight container) and refrigerate for at least 1 hour before serving. This allows the flavors to meld and the cucumbers to soak up the dressing.

Notes

  • Cucumber selection: Use fresh, firm cucumbers for the best texture. English or Persian cucumbers work well and don’t require peeling.
  • Make it ahead: This salad tastes even better when made a few hours in advance or overnight, as the flavors develop over time.
  • Adjust sweetness: If you prefer a tangier salad, reduce the sugar to ½ tablespoon. For a sweeter version, increase it to 1½ tablespoons.
  • Add-ins: Feel free to add other vegetables like radishes or cherry tomatoes for extra crunch and color.
