For the Bisque:

  • ½ lb (225g) shrimp, peeled & deveined
  • ½ lb (225g) crab meat (lump or claw)
  • 2 tbsp butter
  • 1 onion, finely chopped
  • 1 carrot, finely diced
  • 2 celery stalks, finely diced
  • 3 garlic cloves, minced
  • ¼ cup tomato paste
  • 3 cups seafood or fish broth
  • 1 cup heavy cream
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt & pepper to taste
  • Fresh parsley, chopped (for garnish)

For Thickening:

  • 2 tbsp all-purpose flour

Instructions

1. Prepare the Seafood

  • In a pot of boiling water, cook shrimp for 2-3 minutes until pink.
  • Remove, let cool, then chop roughly. Set aside.

2. Sauté the Vegetables

  • In a large pot, melt butter over medium heat.
  • Add onion, carrot, celery, and garlic. Sauté for 5-7 minutes until softened.

3. Build the Flavor Base

  • Stir in tomato paste, paprika, and thyme. Cook for 2 minutes.
  • Sprinkle flour over veggies, stirring to form a roux.

4. Simmer the Bisque

  • Gradually pour in seafood broth, stirring to avoid lumps.
  • Bring to a simmer, then reduce heat and cook for 20 minutes.

5. Add Seafood & Cream

  • Stir in shrimp, crab meat, and heavy cream.
  • Simmer for 5 more minutes until heated through.
  • Season with salt & pepper to taste.

6. Serve & Enjoy!

  • Ladle into bowls, garnish with fresh parsley, and serve warm.

Serving Suggestions:

  • Pair with garlic bread or a crisp white wine.
  • For extra richness, top with a drizzle of truffle oil or a sprinkle of Old Bay seasoning.
