One bite of this coconut lime chicken and I’m transported back to a beach vacation, where the air smelled like citrus and the food was pure sunshine. I first made this dish on a chilly evening to brighten our spirits—and it worked like magic. Creamy coconut, tangy lime, and tender chicken all in one pan. It’s simple, quick, and absolutely satisfying!
2 chicken breasts, cut into strips or chunks
1 tablespoon olive oil
Salt and pepper to taste
1 cup coconut milk (full fat for creaminess)
Zest and juice of 1 lime
2 garlic cloves, minced
1 teaspoon grated fresh ginger (or ¼ tsp ground ginger)
1 tablespoon soy sauce or coconut aminos
Optional: chopped cilantro and lime wedges for garnish
Season chicken with salt and pepper.
In a skillet, heat olive oil over medium heat and cook chicken until browned (about 5–6 minutes). Remove and set aside.
In the same pan, sauté garlic and ginger for 1 minute.
Stir in coconut milk, lime juice, lime zest, and soy sauce. Simmer for 2–3 minutes.
Return chicken to the pan and simmer another 5–7 minutes, until sauce thickens and chicken is cooked through.
Garnish with cilantro and lime wedges if desired. Serve over rice or with steamed veggies.
Want extra richness? Add a tablespoon of butter at the end.
Perfect with jasmine rice or cauliflower rice.
