Coconut Lime Chicken

One bite of this coconut lime chicken and I’m transported back to a beach vacation, where the air smelled like citrus and the food was pure sunshine. I first made this dish on a chilly evening to brighten our spirits—and it worked like magic. Creamy coconut, tangy lime, and tender chicken all in one pan. It’s simple, quick, and absolutely satisfying!

Ingredients

  • 2 chicken breasts, cut into strips or chunks

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • 1 cup coconut milk (full fat for creaminess)

  • Zest and juice of 1 lime

  • 2 garlic cloves, minced

  • 1 teaspoon grated fresh ginger (or ¼ tsp ground ginger)

  • 1 tablespoon soy sauce or coconut aminos

  • Optional: chopped cilantro and lime wedges for garnish

Instructions

  • Season chicken with salt and pepper.

  • In a skillet, heat olive oil over medium heat and cook chicken until browned (about 5–6 minutes). Remove and set aside.

  • In the same pan, sauté garlic and ginger for 1 minute.

  • Stir in coconut milk, lime juice, lime zest, and soy sauce. Simmer for 2–3 minutes.

  • Return chicken to the pan and simmer another 5–7 minutes, until sauce thickens and chicken is cooked through.

  • Garnish with cilantro and lime wedges if desired. Serve over rice or with steamed veggies.

Notes

  • Want extra richness? Add a tablespoon of butter at the end.

  • Perfect with jasmine rice or cauliflower rice.

  • Tastes even better the next day—great for meal prep!
