This dish brings me back to summer dinners on the porch—where laughter and the scent of fresh basil filled the air. Chicken Pesto Pasta with juicy tomatoes and toasty pine nuts is a meal that feels fancy, but is so easy to make. It’s perfect for busy nights or special gatherings.
8 oz pasta (penne or rotini work well)
1 tbsp olive oil
2 chicken breasts, cubed
Salt & pepper to taste
1 cup cherry tomatoes, halved
1/4 cup basil pesto (store-bought or homemade)
2 tbsp toasted pine nuts
1/4 cup grated Parmesan
Optional: fresh basil for garnish
Cook pasta according to package directions. Drain and set aside.
Sauté chicken: In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper, and cook until golden and fully cooked (about 6–8 minutes).
Add tomatoes and cook for another 2 minutes, just until softened.
Combine: Add cooked pasta and pesto to the skillet. Toss gently to coat everything evenly.
Finish: Sprinkle with pine nuts and Parmesan. Garnish with fresh basil if desired.
Serve warm and enjoy every flavorful bite.
Toast pine nuts in a dry pan for 2–3 minutes until golden.
