Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Combine Ingredients: In a large bowl, mix the cooked chicken, riced cauliflower, buffalo sauce, cream cheese, and half of the shredded cheddar cheese. The mixture will be thick.
  3. Assemble Casserole: Spread the mixture evenly into a medium-sized casserole dish. Top with the remaining cheddar cheese.
  4. Bake: Cover the dish loosely with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  5. Garnish and Serve: Garnish with extra buffalo sauce and fresh minced parsley if desired. Serve hot.

  • Cream Cheese: Let the cream cheese come to room temperature for about an hour before starting. This makes it easier to mix.
