This dish was born from a weeknight dinner scramble—just Boursin cheese, some chicken, and a box of orzo. But one bite in, we knew it was something special. Creamy, garlicky, and full of cozy flavor, it’s like a hug in a bowl. Simple enough for a busy night, fancy enough to share with guests!
1 lb boneless, skinless chicken breast (cubed or sliced)
1 tbsp olive oil
Salt & pepper to taste
1 cup orzo pasta
2 cups chicken broth
1 (5.2 oz) package Boursin garlic & fine herbs cheese
1/4 cup grated Parmesan
1/4 cup milk or cream (optional, for extra creaminess)
Fresh parsley for garnish
Season chicken with salt and pepper. In a large skillet, heat olive oil over medium heat and cook chicken until golden and cooked through. Remove and set aside.
In the same skillet, add orzo and toast for 1–2 minutes.
Pour in chicken broth and stir, letting orzo simmer for 8–10 minutes until tender and most liquid is absorbed.
Stir in Boursin cheese, Parmesan, and milk or cream if using.
Add chicken back in and stir to combine until creamy and heated through.
Garnish with chopped parsley and serve warm.

Swap chicken with shrimp or mushrooms for a twist.
