  • 2 cups grated sharp cheddar cheese
  • 1 cup milk
  • 1 large egg
  • 6 tablespoons unsalted butter, melted and cooled

Instructions

  1. Preheat Oven: Heat oven to 400°F (200°C). Grease a muffin tin liberally with nonstick cooking spray.
  2. Cook Sausage: In a sauté pan, cook the sausage over medium heat, breaking it into crumbles with a wooden spoon, until browned and cooked through. Drain on a paper towel-lined plate.
  3. Mix Dry Ingredients: In a large bowl, whisk together flour, baking powder, salt, and sugar (if not using maple syrup). Stir in the cooked sausage and cheddar cheese.
  4. Combine Wet Ingredients: In a small bowl, whisk together milk, egg, and maple syrup (if using). Pour into the flour mixture, then add the melted butter. Stir until just combined—don’t overmix!
  5. Fill Muffin Tins: Spoon the batter into the prepared muffin tins, filling each to the top. Sprinkle with additional cheese if desired.
  6. Bake: Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden brown.
  7. Cool & Serve: Let the muffins cool in the pan for 5 minutes, then transfer to a cooling rack. Serve warm!
