4 cups shredded green cabbage
1 cup shredded red cabbage (optional for color)
1 apple, julienned or thinly sliced (Honeycrisp or Gala works well)
½ cup dried cranberries
¼ cup chopped walnuts or sunflower seeds (optional)
¼ cup finely chopped red onion
Dressing:
½ cup mayonnaise (or Greek yogurt for a lighter version)
1 tablespoon apple cider vinegar
1 tablespoon honey or maple syrup
Salt and pepper to taste
In a large mixing bowl, combine green and red cabbage, apple, cranberries, onion, and nuts or seeds.
In a separate bowl, whisk together mayonnaise, vinegar, honey, salt, and pepper.
Pour the dressing over the slaw and toss gently to coat everything evenly.
Let it sit in the fridge for at least 20 minutes before serving to let the flavors blend.
Swap apple cider vinegar for lemon juice if you prefer more brightness.
Add a pinch of celery seed for extra flavor.
Great as a side for chicken, pork, or holiday roasts!
