These Chewy Homemade Granola Bars are a delightful treat that combines the crunch of rolled oats and Rice Krispies with the sweetness of chocolate chips and marshmallows.   • 6 tablespoons brown sugar, packed
  • 2/3 cup honey
  • 3 cups rolled oats
  • 1 1/2 cups Rice Krispies cereal
  • 1/2 cup graham crackers, crushed into pieces and crumbs
  • 1/2 teaspoon Kosher salt
  • 1/2 cup mini chocolate chips
  • 1/2 cup cereal marshmallows

Instructions

  1. Prepare the Pan:
    Spray an 8×8 inch pan with canola oil or baking spray. Line the bottom with parchment paper for easy removal.
  2. Make the Syrup:
    In a small pot over medium heat, add the butter, brown sugar, and honey. Whisk until the mixture starts bubbling, then cook for exactly 2 minutes. Remove from heat.
  3. Combine Dry Ingredients:
    In a large bowl, mix the rolled oats, Rice Krispies cereal, crushed graham crackers, and salt.
  4. Mix Wet and Dry Ingredients:
    Pour the warm butter mixture over the dry ingredients. Stir carefully until everything is well coated. Let the mixture cool for 20 minutes.
  5. Add Mix-Ins:
    Gently fold in the mini chocolate chips and marshmallows.
  6. Press into Pan:
    Transfer the mixture to the prepared pan. Press it down gently but firmly to ensure it’s packed tightly.
  7. Chill and Set:
    Refrigerate the bars for at least 2 hours to allow them to solidify. Once set, slice into 16 bars.

  • For a healthier version, you can reduce the amount of honey or substitute it with maple syrup.
