  • 4 medium potatoes, diced
  • 4 large eggs
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • 2 tbsp butter
  • ½ cup cooked ham or bacon (optional)
  • ¼ cup green onions or chives, chopped
  • Salt & pepper to taste

Instructions

1. Prep & Cook Potatoes (10-12 mins)

  • Boil diced potatoes in salted water for 8-10 mins until tender. Drain.
  • Heat 1 tbsp butter in a skillet over medium heat. Add potatoes and cook for 5-7 mins until golden and crispy.

2. Add Eggs & Cheese (5-7 mins)

  • In a bowl, whisk eggs, milk, salt, and pepper.
  • Push potatoes to one side, melt remaining butter, and pour in eggs.
  • Stir gently until eggs are softly scrambled (3-4 mins).

3. Mix & Melt Cheese (2-3 mins)

  • Add ham/bacon (if using) and mix.
  • Sprinkle cheddar cheese on top, cover, and let melt for 2 mins.

4. Garnish & Serve

  • Top with green onions/chives.
