Cheesy Mushroom Ravioli Casserole with Spinach

This comforting casserole is a crowd-pleaser, combining the rich flavors of mushrooms, spinach, and a creamy, cheesy sauce with tender raviolini. It’s easy to prepare and perfect for a cozy family dinner or entertaining guests. The dish is hearty, flavorful, and ready in under an hour!

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, finely chopped
  • 1 (8-ounce) package sliced white mushrooms
  • 2½ cups baby spinach
  • 2 cups heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • Pepper, to taste
  • ½ cup grated Parmesan cheese (plus extra for topping)
  • 1 package Lidl Preferred Selection five cheese ravioloni

Instructions

  1. Preheat the oven to 400°F. Grease a 9” x 13” casserole dish with cooking spray.
  2. Sauté the vegetables: Heat olive oil in a medium saucepan over medium heat. Add the onion and cook for 5 minutes until softened. Add the garlic and mushrooms, and sauté for 5 minutes until the mushrooms are golden brown. Stir in the spinach and cook until just wilted. Transfer the mixture to a bowl and set aside.
  3. Make the cream sauce: In the same pan, add the heavy cream, garlic powder, and salt. Bring to a gentle simmer, then reduce the heat to low. Simmer for about 10 minutes, stirring occasionally, until the sauce thickens enough to coat the back of a spoon. Season with pepper to taste. Remove from heat and stir in the Parmesan cheese.
  4. Assemble the casserole: Spread a thin layer of the cream sauce on the bottom of the prepared casserole dish. Arrange half of the uncooked raviolini in a single layer. Top with half of the mushroom mixture and half of the remaining cream sauce. Repeat the layers with the remaining raviolini, mushroom mixture, and cream sauce. Sprinkle the top with extra Parmesan cheese and pepper.
  5. Bake: Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 2 minutes, or until the top is golden brown and bubbly.
  6. Serve: Let the casserole cool for 5 minutes before serving. Enjoy!

  • Use fresh mushrooms for the best flavor and texture.
  • Feel free to substitute the heavy cream with half-and-half for a lighter version.
