1 cup all-purpose flour
1 tsp baking powder
½ tsp salt
1 cup milk
1 large egg
1 cup grated cheddar cheese
2 tbsp chopped fresh chives
Butter or oil for cooking
In a bowl, whisk together flour, baking powder, and salt.
In another bowl, beat the egg and milk together.
Stir wet ingredients into the dry mixture until just combined.
Fold in grated cheese and chives.
Heat a little butter or oil in a non-stick skillet over medium heat.
Pour small rounds of batter into the pan and cook until bubbles form.
Flip and cook another 2–3 minutes until golden brown.
Serve warm with sour cream, eggs, or smoked salmon.
