My mother used to make these on chilly afternoons, and the scent would fill the whole house — cheesy, warm, and full of love. These Cheese & Chive Pancakes are soft, savory, and perfect for breakfast, lunch, or a cozy snack. You can even pair them with a fried egg or a bit of smoked salmon for something extra special.

Ingredients

  • 1 cup all-purpose flour

  • 1 tsp baking powder

  • ½ tsp salt

  • 1 cup milk

  • 1 large egg

  • 1 cup grated cheddar cheese

  • 2 tbsp chopped fresh chives

  • Butter or oil for cooking

Instructions

  • In a bowl, whisk together flour, baking powder, and salt.

  • In another bowl, beat the egg and milk together.

  • Stir wet ingredients into the dry mixture until just combined.

  • Fold in grated cheese and chives.

  • Heat a little butter or oil in a non-stick skillet over medium heat.

  • Pour small rounds of batter into the pan and cook until bubbles form.

  • Flip and cook another 2–3 minutes until golden brown.

  • Serve warm with sour cream, eggs, or smoked salmon.

Notes

  • Swap cheddar with feta or gouda for a different flavor.

  • Use whole wheat flour for added fiber.

  • Leftovers can be reheated in a toaster!
