Ingredients

Scale
  • 2 Tbsp butter
  • 2 Tbsp all-purpose flour (or cornstarch for gluten-free)
  • 3 cups chicken broth
  • 1 cup half-and-half (or heavy cream)
  • 3 cups cooked chopped chicken (rotisserie chicken works great!)
  • 1 lb smoked or andouille sausage, sliced and browned
  • 2 (15-oz) cans red beans, rinsed and drained
  • 1 (11-oz) can white corn, drained
  • 2 (4-oz) cans chopped green chilies, undrained
  • 2 Tbsp dried minced onion flakes
  • ¼ tsp garlic powder
  • 2 tsp cumin
  • 1 tsp chili powder
  • 1½ Tbsp Cajun seasoning (store-bought or homemade)
  • 2 cups shredded pepper jack cheese

Instructions

  1. Make the Roux: In a Dutch oven, melt the butter over medium heat. Stir in the flour and cook for 2 minutes, stirring constantly.
  2. Add Liquids: Gradually whisk in the chicken broth and half-and-half. Bring to a boil and cook for 2 minutes, or until the mixture thickens.
  3. Combine Ingredients: Add the cooked chicken, browned sausage, red beans, corn, green chilies, onion flakes, garlic powder, cumin, chili powder, and Cajun seasoning. Stir well to combine.
  4. Simmer: Cook for an additional 10 to 15 minutes, stirring occasionally, until heated through.
  5. Add Cheese: Stir in the shredded pepper jack cheese until melted and creamy.
  6. Serve: Ladle into bowls and enjoy with your favorite sides like cornbread or a fresh salad.

Notes

  • Time-Saver: Use rotisserie chicken for quick prep.
  • Spice Level: Adjust the Cajun seasoning to your preferred heat level.
  • Vegetable Add-Ins: Add diced green bell pepper, celery, fresh onion, or jalapeños for extra flavor and crunch.
  • Lower-Calorie Option: Substitute turkey smoked sausage and use low-fat half-and-half.
  • Gluten-Free: Replace flour with cornstarch for thickening.
