Buffalo Chicken Bowls: A Flavor-Packed, Easy Meal for Busy Weeknights

Buffalo Chicken Bowls

Back when my kids were still in school, this was the one meal that would bring everyone to the table in seconds. It’s simple, quick, and full of flavor – a little spicy, a lot comforting. Whether you’re cooking for family or meal prepping for the week, this bowl delivers every time. Let me know if this becomes one of your go-to meals too!

Ingredients

Scale
  • 2 cups cooked shredded chicken (rotisserie chicken works great!)

  • 1/3 cup buffalo sauce (adjust to your spice level)

  • 2 cups cooked brown rice or quinoa

  • 1 cup corn kernels (frozen or canned, drained)

  • 1 cup black beans (rinsed and drained)

  • 1 cup cherry tomatoes, halved

  • 1 avocado, sliced

  • 1/4 cup ranch or blue cheese dressing

  • Optional: chopped green onions or fresh cilantro for garnish

Instructions

  1. In a bowl, mix shredded chicken with buffalo sauce until fully coated.

  2. Warm up the corn, beans, and rice.

  3. Divide rice into bowls and top with buffalo chicken, corn, beans, cherry tomatoes, and avocado.

  4. Drizzle with ranch or blue cheese dressing.

  5. Garnish with green onions or cilantro if desired.

  6. Serve warm and enjoy every spicy, creamy bite!

Notes

To make it even lighter, try using Greek yogurt instead of dressing!
