Rich, moist, and dripping in caramel goodness—this is the kind of sweet you’ll want to share with everyone you love.

Ingredients

For the pudding:

  • 1 1/4 cups chopped pitted dates

  • 1 cup boiling water

  • 1 tsp baking soda

  • 1/4 cup unsalted butter, softened

  • 3/4 cup brown sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 1/4 cups all-purpose flour

  • 1 1/2 tsp baking powder

  • Pinch of salt

For the toffee sauce:

  • 1/2 cup unsalted butter

  • 1 cup brown sugar

  • 3/4 cup heavy cream

  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350°F (175°C). Grease an 8-inch baking dish.

  • Combine dates, boiling water, and baking soda. Let sit 10 minutes, then mash lightly.

  • In another bowl, cream butter and brown sugar. Beat in eggs and vanilla.

  • Mix in flour, baking powder, and salt. Stir in date mixture.

  • Pour into the dish and bake for 35–40 minutes, until a toothpick comes out clean.

  • While it bakes, make the sauce: simmer butter, brown sugar, and cream until thickened (about 5 minutes). Stir in vanilla.

  • Poke holes in the warm pudding and pour some sauce over the top. Let soak before serving with extra sauce and whipped cream or ice cream.

Notes

  • Don’t skip soaking the dates—they give that signature sticky texture.

  • Serve warm with a scoop of vanilla ice cream for a heavenly finish.
