Banana Bread Cinnamon Rolls

  • 2 ripe bananas, mashed

  • 2 ¼ teaspoons active dry yeast

  • ¼ cup warm milk

  • ¼ cup granulated sugar

  • ¼ cup melted butter

  • 1 teaspoon vanilla extract

  • 1 large egg

  • 3 cups all-purpose flour

  • ½ teaspoon salt

  • 1 teaspoon cinnamon (for dough)

For the Filling:

  • ½ cup brown sugar

  • 2 tablespoons ground cinnamon

  • ¼ cup softened butter

For the Glaze:

  • 1 cup powdered sugar

  • 23 tablespoons milk

  • ½ teaspoon vanilla extract

Instructions

  • Warm the milk slightly and dissolve the yeast in it. Let it sit for 5 minutes until frothy.

  • In a large bowl, mix mashed bananas, sugar, melted butter, vanilla, and egg.

  • Add the yeast mixture and combine.

  • Gradually add flour, salt, and cinnamon. Knead until smooth (about 8 minutes).

  • Cover and let the dough rise in a warm place for 1 hour, until doubled.

  • Roll out the dough into a rectangle. Spread with softened butter, sprinkle brown sugar and cinnamon evenly.

  • Roll the dough tightly into a log and cut into 12 slices.

  • Place rolls into a greased baking dish, cover, and let rise for another 30 minutes.

  • Preheat oven to 350°F (175°C). Bake for 20–25 minutes until golden.

  • Mix glaze ingredients and drizzle over warm rolls. Enjoy the magic!

Notes

Use very ripe bananas (the spottier, the better) for extra sweetness and moistness!
