2 ripe bananas, mashed
2 ¼ teaspoons active dry yeast
¼ cup warm milk
¼ cup granulated sugar
¼ cup melted butter
1 teaspoon vanilla extract
1 large egg
3 cups all-purpose flour
½ teaspoon salt
1 teaspoon cinnamon (for dough)
For the Filling:
½ cup brown sugar
2 tablespoons ground cinnamon
¼ cup softened butter
For the Glaze:
1 cup powdered sugar
2–3 tablespoons milk
½ teaspoon vanilla extract
Warm the milk slightly and dissolve the yeast in it. Let it sit for 5 minutes until frothy.
In a large bowl, mix mashed bananas, sugar, melted butter, vanilla, and egg.
Add the yeast mixture and combine.
Gradually add flour, salt, and cinnamon. Knead until smooth (about 8 minutes).
Cover and let the dough rise in a warm place for 1 hour, until doubled.
Roll out the dough into a rectangle. Spread with softened butter, sprinkle brown sugar and cinnamon evenly.
Roll the dough tightly into a log and cut into 12 slices.
Place rolls into a greased baking dish, cover, and let rise for another 30 minutes.
Preheat oven to 350°F (175°C). Bake for 20–25 minutes until golden.
Mix glaze ingredients and drizzle over warm rolls. Enjoy the magic!
Use very ripe bananas (the spottier, the better) for extra sweetness and moistness!
