  • 2 small zucchini, diced
  • 2 small yellow squash, diced (or substitute with zucchini)

  • 1/4 cup whole-wheat panko breadcrumbs
  • 2 egg whites
  • 1/2 teaspoon kosher salt
  • 2 teaspoons garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon dried basil leaves

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Spray a 9×13-inch casserole dish with non-stick spray and set aside.
  2. Cook the Veggies: In a large skillet, heat the olive oil over medium heat. Add the spinach, zucchini, and yellow squash. Cook for about 5 minutes, or until the spinach is wilted and the squash is tender. Drain any excess liquid and transfer the mixture to a large mixing bowl.
  3. Combine Ingredients: To the mixing bowl, add the feta cheese, parmesan cheese, panko breadcrumbs, egg whites, salt, garlic powder, black pepper, and dried basil. Mix well until everything is evenly combined.
  4. Bake: Spread the mixture evenly into the prepared casserole dish. Bake for 30-40 minutes, or until the top is golden brown.
