These Baked Feta Potatoes are a delicious twist on the viral baked feta pasta trend. They make a perfect side dish with crispy roasted potatoes tossed in creamy, flavorful baked feta cheese. The combination of herbs, garlic, and a touch of honey creates a rich and satisfying flavor profile.

  • 12 large baking potatoes
  • 1 (200g) block of feta cheese
  • 2 tbsp olive oil (divided)
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 head of garlic (top cut off)
  • 1 lemon (quartered)
  • 1 tbsp honey
  • 1/4 cup (20g) fresh basil (torn or chopped)

Instructions

  1. Preheat the oven to 200°C (390°F).
  2. Prepare the potatoes: Wash and cube the potatoes into small, even pieces (smaller cubes cook faster and crisp up better). Place them in a baking dish.
  3. Season the potatoes: Add dried thyme, oregano, salt, pepper, and 1 tbsp of olive oil to the potatoes. Toss to coat evenly.
  4. Add the feta and aromatics: Place the block of feta in the center of the tray. Dip one side of the feta in the seasonings, then flip it over. Add the garlic head (cut side up) and two lemon quarters to the tray. Drizzle the remaining 1 tbsp of olive oil over everything.
  5. Bake: Place the tray in the oven and bake for 45-55 minutes, or until the potatoes are crispy and golden. Check the garlic after 35 minutes—if it’s browning too quickly, remove it to prevent burning.
  6. Prepare the garlic paste: Once the garlic is cool enough to handle, squeeze the roasted cloves out of their skins. Mash them with a knife or fork to create a paste.
  7. Combine everything: Squeeze the juice from the remaining lemon quarters over the potatoes. Add the garlic paste and fresh basil, then gently mix everything together, breaking up the baked feta into creamy chunks.
  8. Finish with honey: Drizzle the honey over the dish and give it one final gentle stir.
  9. Serve and enjoy!
