  • 12 large baking potatoes
  • 1 block (200g) feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 head of garlic (top cut off)
  • 1 lemon, quartered
  • 1 tbsp honey
  • 1/4 cup (20g) fresh basil, shredded

Instructions

  1. Preheat the oven: Set your oven to 200°C (390°F).
  2. Prepare the potatoes: Wash and cube the potatoes, then place them in a baking dish.
  3. Season the potatoes: Add thyme, oregano, salt, pepper, and 1 tbsp olive oil to the potatoes. Toss to coat evenly.
  4. Add feta and aromatics: Place the feta block in the center of the tray (optional: dip one side in the seasonings, then flip it over). Add the garlic head and half the lemon quarters to the tray. Drizzle the remaining olive oil over everything.
  5. Bake: Roast for 45-55 minutes, or until the potatoes are crispy and golden. Remove the garlic after 35 minutes if it starts to brown.
  6. Prepare the garlic: Squeeze the roasted garlic cloves out of their skins and mash them with a knife.
  7. Combine: Stir the mashed garlic, juice from the remaining lemon, and fresh basil into the potatoes. Gently mix the potatoes with the baked feta until creamy and combined.
  8. Finish: Drizzle honey over the dish and sprinkle with shredded basil.
  9. Serve: Enjoy warm as a side dish or a light main course!

  • Potato size: Cut the potatoes into even-sized cubes to ensure they cook uniformly.
  • Feta texture: If the potatoes need more time to cook, remove the feta to prevent it from becoming rubbery.
