Pineapple Fried Rice!

Bring the vibrant flavors of Thailand to your table with this Thai Pineapple Fried Rice! Sweet, savory, and slightly spicy, this dish is a perfect balance of textures and tastes. It’s quick to make, packed with fresh ingredients, and great for meal prep or entertaining.

  • 2 cups cooked jasmine rice (preferably day-old, for best texture)
  • 1 cup pineapple chunks (fresh or canned)
  • 1 red bell pepper, diced
  • 3 green onions, chopped (whites & greens separated)
  • 2 eggs, lightly beaten
  • ¼ cup cashews (optional, for crunch)
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp curry powder
  • 1 tbsp vegetable oil (or coconut oil)
  • Salt & pepper, to taste
  • Fresh cilantro or basil, for garnish

Instructions

1. Prep the Ingredients

  • Cook jasmine rice ahead of time (or use leftover rice). Day-old rice fries better!
  • Chop bell pepper, green onions, and pineapple into bite-sized pieces.

2. Stir-Fry the Veggies & Eggs

  1. Heat oil in a wok or large pan over medium-high heat.
  2. Add bell pepper and white parts of green onions. Stir-fry for 2-3 mins until slightly soft.
  3. Push veggies to one side, pour in beaten eggs, and scramble until cooked.

3. Add Rice & Seasonings

  1. Toss in rice, breaking up clumps. Stir-fry for 2-3 mins.
  2. Mix in pineapple chunkssoy sauce, and curry powder. Stir well to coat evenly.
  3. Season with salt & pepper to taste.

4. Garnish & Serve!

  1. Top with green onion topscashews, and fresh herbs.
  2. Serve hot with extra soy sauce or lime wedges.
