Ingredients

Scale
  • 3 cups cooked chicken, diced or shredded
  • 3 cups cooked rice
  • ½ cup butter, room temperature and cubed
  • 8 ounces cream cheese, room temperature and cubed
  • 10.5 ounces cream of chicken soup
  • 3 cloves garlic, minced
  • 0.7 ounce Italian dressing mix (e.g., Good Seasons)
  • 1 cup chicken stock
  • 2 cups shredded Colby Jack cheese, divided
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Spray a 9×13” casserole dish with cooking spray.
  2. Prepare Sauce: In a microwave-safe bowl, soften the cream cheese and butter in the microwave for 20-30 seconds. Whisk until smooth.
  3. Combine Ingredients: In a large mixing bowl, combine the cooked chicken, rice, butter and cream cheese mixture, cream of chicken soup, garlic, Italian dressing mix, chicken stock, half of the shredded cheese, and salt and pepper. Mix well until evenly combined.
  4. Assemble Casserole: Transfer the mixture into the prepared casserole dish. Top with the remaining shredded cheese.
  5. Bake: Cover the dish with foil and bake for 20-25 minutes, or until the cheese is melted and the casserole is bubbling.
  6. Garnish and Serve: Remove from the oven and let it cool for 5 minutes. Garnish with fresh parsley and serve warm.

Notes

  • Chicken: Use pre-cooked rotisserie chicken for convenience and added flavor.
  • Rice: Cook the rice separately to avoid it becoming mushy during baking.
  • Cream Cheese and Butter: Ensure they are at room temperature for smooth blending.
  • Seasoning: If you prefer less sodium, substitute the Italian dressing mix with a blend of dried herbs like oregano, basil, and thyme.
  • Variations: Add vegetables like mushrooms, peas, or bell peppers for extra nutrition. Swap Colby Jack cheese with mozzarella or Swiss for a different flavor profile.
