  • 1 (20 oz) bag frozen cauliflower rice
  • 1 (10 oz) can diced tomatoes & chilies
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 bell pepper, diced
  • 1 small yellow onion, diced
  • 1 tbsp oil
  • 1+ cups shredded cheddar cheese

Optional Toppings:

  • Avocado
  • Sour cream
  • Jalapeños
  • Lettuce

Instructions

  1. Sauté Vegetables: In a large skillet over medium heat, add 1 tbsp of oil. Sauté the diced onion and bell pepper for 3-4 minutes, or until softened.
  2. Cook Ground Beef: Add the ground beef to the skillet and cook until no longer pink, breaking it into small pieces as it cooks. Stir in the taco seasoning and water.
  3. Add Cauliflower Rice & Tomatoes: Stir in the frozen cauliflower rice and the can of diced tomatoes & chilies. Simmer for about 10 minutes, or until everything is heated through.
  4. Add Cheese: Sprinkle shredded cheddar cheese over the top and let it melt.
  5. Serve: Enjoy as-is or top with your favorite toppings like avocado, sour cream, jalapeños, or lettuce.
