Cheddar Apple Slaw

This recipe is a nod to Grandpa’s fall lunches—always a sharp slice of cheddar next to a fresh apple. This Cheddar Apple Slaw brings those flavors together in one crunchy, creamy bowl. It’s tangy, sweet, and a little bit sharp—just like the old man himself. Perfect as a side for grilled meats or piled high on a sandwich!

Ingredients

  • 2 cups shredded green cabbage

  • 1 cup shredded red cabbage (optional for color)

  • 1 large apple (Honeycrisp or Fuji), julienned or grated

  • 1/2 cup sharp cheddar cheese, shredded

  • 1/4 cup green onions or chives, finely sliced

  • 1/4 cup toasted sunflower seeds (optional)

For the Dressing:

  • 1/4 cup plain Greek yogurt or mayo

  • 1 tbsp apple cider vinegar

  • 1 tsp Dijon mustard

  • 1 tsp honey

  • Salt & pepper to taste

Instructions

  • In a large bowl, mix the cabbage, apple, cheddar, green onions, and sunflower seeds.

  • In a small bowl, whisk together all dressing ingredients until smooth.

  • Pour dressing over the slaw and toss until well coated.

  • Let sit for 10 minutes in the fridge to let flavors meld, or serve immediately.

Notes

  • Use a mandoline slicer for perfectly thin apples.

  • Add shredded carrots for color and sweetness.

  • Tastes even better the next day!
