1 cup cooked farro (cooled)
1/2 avocado, sliced
1/2 cup cucumber, chopped
1/4 cup edamame (steamed)
1/2 cup shredded kale or spinach
2 tbsp toasted pumpkin seeds
A few microgreens or sprouts (optional)
For the Green Goddess Dressing:
1/4 cup plain Greek yogurt
1/4 avocado
1 tbsp lemon juice
2 tbsp olive oil
1 tbsp chopped parsley
1 tbsp chopped chives
1 tsp Dijon mustard
Salt & pepper to taste
1–2 tbsp water (to thin)
In a blender or food processor, blend all dressing ingredients until creamy and smooth. Add water to reach desired consistency.
In a bowl, arrange farro as the base.
Top with cucumber, edamame, kale, avocado slices, and pumpkin seeds.
Drizzle with the Green Goddess dressing.
Garnish with sprouts or microgreens, if using, and enjoy!
